From Reggio Emilia to Stockholm — the authentic story of two cousins who left everything behind to share the true taste of Italy.
Where it all began
The story begins in 2015, when two real cousins — Davide Disisto and Enrico — made a bold decision. Davide left his career at an advertising agency. Enrico walked away from his position at the European Parliament in Brussels. Both gave up the comfortable and the predictable to pursue something they loved more than anything: food.
Born and raised in Reggio Emilia — the city in Emilia-Romagna where Parmigiano Reggiano is king and Ferrari is a way of life — they carried with them a deep reverence for Italian produce, tradition, and the art of eating well.
They started humbly: selling cheeses and cured meats from small Italian farms at Swedish markets. The response was immediate and overwhelming. Stockholm was hungry for the real thing.

The turning point
A pivotal encounter with Gabriele Bonci — the legendary Roman pizza maker and undisputed master of pizza al taglio — transformed their vision entirely.
When Bonci came to consult at a small Stockholm restaurant, Davide and Enrico worked alongside him, absorbing his philosophy: long fermentation, respect for flour, and the pursuit of lightness. It opened up a whole new world.
"We took inspiration from Gabriele, but we also adapted the pizza to our own tastes," Davide explains. "The dough is slightly rustic — crispy on the bottom, soft in the middle — with a fermentation process that gives it a surprising lightness. Our goal is for the pizza to melt in your mouth."

Our Philosophy
Every ingredient is sourced from small, trusted farms — Swedish and Italian. Stracciatella from Hälsingland, tomatoes from Puglia, Parmigiano from Emilia Romagna. We know where everything comes from.
Our sourdough dough ferments slowly, developing complex flavour and exceptional lightness. No shortcuts. The result is a pizza that is easy to digest and impossible to forget.
We serve pizza on cutting boards, with a fork and knife — almost like a gourmet dish. Because we believe great food deserves to be treated with respect, whether at a mingle event or a corporate lunch.
Our Journey
2015
Davide and Enrico leave their careers to sell Italian cheeses and cured meats at Stockholm markets. The response is immediate.
2016
Working alongside Gabriele Bonci in Stockholm, the cousins discover the art of pizza al taglio — long fermentation, light dough, Roman technique.
2018
The first Italian Cousins bakery opens in Vasastan, Odengatan 78. Pizza al taglio, specialty coffee, and natural wines.
2020–22
Rapid expansion to Södermalm (Hornsgatan 68), City, and Kungsholmen. Four locations across Stockholm.
Today
Pizza tray catering for events across Stockholm, plus frozen pizza production. The cousins are bringing authentic Italian flavour to every table in the city.
